Petotskey Cookies

This Recipe is

    VEGAN *see egg substitution


2 Cups Brown Rice Flour
2/3 Cups Potato Starch
1/3 Cup Tapioca Flour

Whisk together, keep on hand

1 cup Vegetable or Palm Shortening
2 1/4 cup Brown Rice Flour Mix
1 1/2 tsp. Baking Soda
1/2 tsp. Salt
1 1/2 tsp. Xanthan Gum
1 cup Sugar
1/2 cup Brown Sugar
3 Large Eggs or egg replacer equivalent
1 TBSP. Vanilla
12 oz. Enjoy Life Chocolate Chips


Beat shortening & sugar until fluffy, add eggs, & vanilla, reduce speed & add dry ingredients. Bake at 375 degrees for 9-15 minutes.
