Healthy Breakfast Recipes: Homemade Apple Maple Sausage

I have a super-awesome, healthy breakfast recipe that is easy!

Apple. Maple. Sausage.

Doesn't the name just sound delicious?

I know, I know. Talking about homemade sausage conjures up images of grinding pork, and weird casings we really don't want to think about...

But have no fear! No grinding required (unless you're into that sort of thing), and no casings. Just good hearty, healthy breakfast sausage that is not only sure to wow, but is surprisingly easy.

This recipe is easy because you make it ahead of time and cook it up in the morning. The only directions are "mix," and "fry."

I have a friend who just told me she made a huge batch and froze them for future breakfasts. Freezable: one of my favorite traits in a food.

Do you hear angels singing? No? You must not have tasted it yet.


This recipe uses

    WHOLE FOODS

It is

    gluten-free

    dairy-free

    egg-free

    nut-free

    soy-free

    corn-free

Ingredients:

1 lb ground chicken - dark meat looks more like traditional sausage, but I have used ground turkey or white meat with just as much success.

1 medium apple, peeled, cored, and diced small

1 tsp ground sage (or two tsp fresh sage, minced)

2 tsp salt

1 Tbsp maple syrup

2 tsp black pepper (gives it a little kick, use less if you have a picky eater)

Directions

Combine all ingredients well. Refrigerate at least 3 hours, preferably overnight.

Form into patties and fry on medium heat until cooked through.

Enjoy with homestyle fries, or roasted potatoes and apples. Of course, it's great paired with some eggs, too.
